Polenta Cropa

Val d'Arigna

La polenta cropa è un piatto tipico della Val d’Arigna, nel cuore delle Orobie valtellinesi, la cui particolarità è l’utilizzo della panna al posto dell’acqua di cottura

INGREDIENTI PER 4 PERSONE

  • 4 pugni di farina di grano saraceno
  • 4 pugni di farina gialla
  • 1,6 kg di patate
  • 4 hg di formaggio casera magro
  • 1 lt di panna fresca

PREPARAZIONE

Bollire le patate e, una volta cotte, pelarle e schiacciarle. Portare a ebollizione la panna fresca, per poi aggiungere le patate schiacciate, la farina e un pizzico di sale. Mescolare per circa 30 minuti, fino a raggiungere la giusta consistenza. Aggiungere il formaggio e mescolare per farlo sciogliere, per poi servire la polenta cropa.
